Sustainability. We hear a lot of talk about it. But what does it really mean, especially to those of us living in Northumberland?

In its most simple sense, being sustainable means something can exist or go on for a long time. It doesn’t necessarily mean it will grow. It might or it might not. It is not a flash in the pan. It is not about the short term. It also something positive.

This is a story about the Lofty Kitchen from my good colleague Marc Cowin. He will tell us about a business in Colborne that opened right at the beginning of the pandemic. It is a story with more twists and turns than a classical opera. Yet, it is a story about building a sustainable business model when everything around it is constantly changing. It is a tale of facing challenges but never giving up.
